About Taiki Otsuka
Taiki Otsuka was born in Shiga Prefecture, Japan, a region renowned for Omi Wagyu. He began his career at a local Omi Wagyu fattening farm, gaining hands-on experience in Wagyu production from the ground up.
Because the farm was exporting Wagyu beef to the United States, Taiki moved to the U.S. to support Wagyu meat sales and operations.
He was involved in launching a Wagyu processing facility in Los Angeles, and later moved to New York, where he established Japan Premium Beef and served as store manager.
He then worked at The Meat Hook, a well-known - a whole animal butcher shop in Brooklyn, deepening his understanding of butchery, meat quality, and full utilization of cattle.
After returning to Japan, Taiki founded Katsu Embryo Laboratory and focused on bovine reproduction and biotechnology.
While working, he earned a Bachelor’s degree from Seikei University, followed by a Master’s degree in Global Food Studies from Hokkaido University.
Today, Taiki Otsuka serves as the representative of four companies: Katsu Embryo Laboratory, Milknet Embryo Laboratory, Ushitomirai, and True Wagyu.
His experience spans the entire Wagyu value chain—from breeding and embryo technology to fattening, butchery, and international distribution.
Taiki Otsuka is also a direct disciple of the late Shogo Takeda, widely regarded as a pioneer of Wagyu breeding outside Japan.
Until shortly before Mr. Takeda’s passing, Taiki worked closely alongside him in the development of Wagyu breeding bulls, learning not only technical skills but also the philosophy behind Wagyu genetics and long-term breeding.
One of their joint achievements was Hanakedaka, a Wagyu bull known for producing cattle with excellent carcass weight and strong overall performance. This experience deeply influenced Taiki’s approach to Wagyu breeding—balancing genetics, productivity, and respect for the animal.
Through this mentorship, Taiki inherited practical knowledge and breeding principles that are rarely documented and are typically passed down only through direct, hands-on collaboration.
